Two weeks ago I shared what I eat on a weekend, and now you’ll see what I ate on a weekday when I go to uni. Enjoy!
Breakfast. Pumpkin pie oatmeal. You’ll need pumpkin puree for this, if it’s not sold where you live, it’s very easy to make – bake a chopped up pumpkin until it softens and puree it in a blender or with a fork. For the oatmeal, I combined water, plant milk, a pinch of salt, brown sugar, cinnamon and ginger powder. Then, I mixed in some pumpkin puree and lastly, the oats. I topped the oatmeal with some dark chocolate and pumpkin seeds.
The situation with vegan food in Lithuanian universities isn’t that great (to put it lightly) so I brought some fruit to have as a small meal. That was two apples and a tangerine.
Lunch. A few weeks ago I made a huge batch of chili (it had kidney beans, corn, red bell pepper, kale, tomatoes and pickles) and I froze part of it, to eat when I didn’t want/didn’t have time to cook. So I cooked some rice, warmed up the chili and had that with some leftover carrot salad (shredded carrot, garlic, basil and soy mayo)
Dinner. I decided to make a split pea stew (that’s the best English explanation that I can find). I rinsed and soaked the peas in the morning. Later, I boiled them in some veggie stock with a couple of bay leaves. In a separate pan I sauteed some onion, garlic and a shredded carrot. When the peas were done (soft but not losing their shape), I mixed everything together and added some salt and pepper.
