Broccoli pizza

It isn’t that hard to find positive things everywhere. Last week my boyfriend injured his knee and had to have ice on it all day long. That’s how all of our frozen broccoli was thawed and we had to use it up asap. And so, this yummy pizza was born! It probably took off some of the pain too!

Broccoli pizza

pizza dough*
pizza sauce (homemade or store bought)
1 bag of frozen broccoli (400g)
1/2 red onion
2 cloves of garlic
100g cheese (1/2 block of violife cheese for pizza)

If making homemade pizza dough, prepare it first.
Preheat the oven to 200°C.
For the topping: chop up the broccoli and red onion, mince the garlic, shred the cheese.
Mix together broccoli, red onion, garlic and most of the cheese.
Assemble! Top the pizza base with sauce, broccoli mixture and the rest of the cheese.
Bake the pizza for 15-20min.

This amount of broccoli will be enough to top 1 or 2 (~30cm) pizzas, depending on how thick you want the topping to be.
*I use this recipe. If you are making homemade pizza dough, I recommend making more and freezing some of it for the next time. Alternatively, you could use a store bought pizza crust or even a tortilla for a quick version (you might need to adjust cooking time and temperature or precook the topping in the pan so the tortilla doesn’t burn).
